Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, granulated sugar, and brown sugar in a mixing bowl. Beat in the eggs one at a time and add the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and cinnamon. Gradually mix the dry ingredients into the wet ingredients until just combined.
- In a separate bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.
- Take a spoonful of cookie dough, flatten it, and place about a teaspoon of cheesecake filling in the center. Encapsulate with more dough and form into a ball, then place on the baking sheet.
- Bake for 12-15 minutes, until edges are lightly golden and centers are set.
- Cool on a wire rack before dusting with powdered sugar.
