- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, whisk the buttermilk, egg, and melted butter until combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; a few lumps are okay.
- Heat a non-stick skillet over medium heat and lightly grease with butter.
- Pour about a quarter-cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook until golden brown, about 1-2 minutes more.
- Remove from heat and serve with syrup or toppings of your choice.
Notes
For a dairy-free option, substitute buttermilk with almond or oat milk with an acid. Use pumpkin pie spice as an alternative to ground cinnamon if desired.
