- 1 cup almond flour
- 1 3/4 cup powdered sugar
- 3 large egg whites, at room temperature
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar (for buttercream)
- 1 teaspoon vanilla extract
- Flavoring of choice (fruit purees, coffee, etc.)
Instructions
- Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
- Beat the egg whites until frothy and gradually add the granulated sugar until stiff peaks form (5–7 minutes).
- Sift together almond flour and powdered sugar, then carefully fold into the meringue.
- Pipe small circles onto the prepared sheets and allow the macarons to rest for 30–60 minutes.
- Bake for 15–20 minutes until they lift easily from the parchment.
- While cooling, beat the softened butter, add powdered sugar and vanilla extract until fluffy, adding milk if needed for consistency.
- Assemble by pairing macarons, adding a dollop of buttercream, and pressing gently together.
- Let assembled macarons rest in the fridge overnight for flavors to meld.
Notes
Ensure mixing bowls are clean and free of oil to properly whip egg whites. Avoid overmixing the batter to prevent flat shells.
