Ingredients

- 2 Chicken thighs (or breast)
- 8 oz Fresh mushrooms (button, cremini, or portobello)
- 3 cloves Fresh garlic (minced)
- 4 cups Chicken broth (homemade or low-sodium)
- 1 Onion (chopped)
- 2 Carrots (sliced)
- 2 Stalks of celery (chopped)
- 2 tbsp Fresh thyme (chopped)
- Salt and pepper (to taste)
- 1/2 cup Milk or cream (optional)
- Fresh parsley (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, celery, and carrots, sauté until tender for about 5 minutes.
- Slice the mushrooms and toss them in.
- Sauté until browned and juices are released.
- Toss in minced garlic and stir for 1 minute.
- Add chicken, broth, and thyme, bring to a simmer for 20 minutes.
- Remove the chicken, shred it, and return to the pot.
- Optional: stir in cream for a velvety texture.
- Season with salt, pepper, and parsley before serving.
Notes
