Ingredients

  • 2 Chicken thighs (or breast)
  • 8 oz Fresh mushrooms (button, cremini, or portobello)
  • 3 cloves Fresh garlic (minced)
  • 4 cups Chicken broth (homemade or low-sodium)
  • 1 Onion (chopped)
  • 2 Carrots (sliced)
  • 2 Stalks of celery (chopped)
  • 2 tbsp Fresh thyme (chopped)
  • Salt and pepper (to taste)
  • 1/2 cup Milk or cream (optional)
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, celery, and carrots, sauté until tender for about 5 minutes.
  3. Slice the mushrooms and toss them in.
  4. Sauté until browned and juices are released.
  5. Toss in minced garlic and stir for 1 minute.
  6. Add chicken, broth, and thyme, bring to a simmer for 20 minutes.
  7. Remove the chicken, shred it, and return to the pot.
  8. Optional: stir in cream for a velvety texture.
  9. Season with salt, pepper, and parsley before serving.

Notes
