- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 tablespoon fresh thyme, chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- Sauté the onions and garlic in olive oil for about 5 minutes until softened.
- Add sliced mushrooms and cook for 5-7 minutes until they release their juices.
- Stir in the chicken pieces and season with salt and pepper; cook until the chicken is no longer pink, about 6-8 minutes.
- Pour in the broth and bring to a gentle simmer; cook uncovered for 20 minutes.
- Incorporate chopped carrots and celery; simmer for an additional 10 minutes until veggies are tender.
- Finish with fresh parsley and thyme before serving.
Notes
