Ingredients

  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 1/2 cups whole milk or coconut milk
  • 2 tablespoons butter, melted
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/2 cup sweetened coconut flakes
  • 1/4 cup sugar
  • 1/2 cup brewed strong coffee or espresso
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, whisk together flour and salt.
  2. In another bowl, combine eggs and whisk in milk until blended.
  3. Gradually pour the wet ingredients into the dry, mixing until smooth. Let the batter rest for at least 30 minutes.
  4. Heat a non-stick skillet over medium heat and add a touch of butter.
  5. Pour a small ladle of batter into the center, swirling to coat the bottom.
  6. Once the edges begin to peel away (after about 2 minutes), gently flip and cook for another minute.
  7. Repeat until all the batter is used, stacking crepes to cool.
  8. Whip the heavy cream until soft peaks form, then fold in sugar, vanilla, coffee, and coconut flakes.
  9. Spread a thin layer of the cream filling on each crepe as you stack them, finishing with a layer of cream on top.
  10. Chill for at least one hour before serving.
  11. Slice and serve chilled, garnished with toasted coconut flakes or cocoa powder.

Notes

Allow crepe batter to rest for better texture. Serve with fresh berries or a dollop of whipped cream for extra flavor.
