A rich and creamy dessert combining layers of delicate crepes with a luscious coconut and coffee filling.

- 1 cup all-purpose flour
- 3 large eggs
- 1 1/2 cups whole milk or coconut milk
- 2 tablespoons butter, melted
- 1/4 teaspoon salt
- 1 cup heavy cream
- 1/2 cup sweetened coconut flakes
- 1/4 cup sugar
- 1/2 cup brewed strong coffee or espresso
- 1 teaspoon vanilla extract
Instructions
- In a mixing bowl, whisk together flour and salt.
- In another bowl, combine eggs and whisk in milk until blended.
- Gradually pour the wet ingredients into the dry, mixing until smooth. Let the batter rest for at least 30 minutes.
- Heat a non-stick skillet over medium heat and add a touch of butter.
- Pour a small ladle of batter into the center, swirling to coat the bottom.
- Once the edges begin to peel away (after about 2 minutes), gently flip and cook for another minute.
- Repeat until all the batter is used, stacking crepes to cool.
- Whip the heavy cream until soft peaks form, then fold in sugar, vanilla, coffee, and coconut flakes.
- Spread a thin layer of the cream filling on each crepe as you stack them, finishing with a layer of cream on top.
- Chill for at least one hour before serving.
- Slice and serve chilled, garnished with toasted coconut flakes or cocoa powder.
Notes
Allow crepe batter to rest for better texture. Serve with fresh berries or a dollop of whipped cream for extra flavor.
