  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups milk
  • 2 tablespoons melted butter
  • 1 cup coconut milk
  • 1 cup brewed coffee
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • Butter for cooking

Instructions

  1. In a mixing bowl, whisk together 1 cup of flour with 2 large eggs. Gradually add 2 cups of milk and 2 tablespoons of melted butter. Combine until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it. Pour a ladle full of batter into the skillet, tilting to spread evenly. Cook for about 1-2 minutes on each side or until lightly golden. Repeat with the remaining batter, stacking the cooked crepes on a plate.
  3. In a separate bowl, whisk together 1 cup of coconut milk, 1 cup of brewed coffee, and ½ cup of sugar until combined. Add 1 teaspoon of vanilla extract and mix well.
  4. Start with a crepe as the base, spread a thin layer of filling over it, and continue layering until all crepes and filling are used. Finish with a crepe on top.
  5. Refrigerate the assembled cake for at least 2-3 hours, allowing the flavors to meld together and the cake to set.
  6. Dust lightly with powdered sugar or shredded coconut, then slice into pieces. Enjoy each bite!

Notes

For gluten-free, replace all-purpose flour with a gluten-free blend. For a lighter essence, use almond or oat milk instead of coconut milk.
