Description
A vibrant and comforting soup that blends the creamy richness of coconut milk with the zesty brightness of lime and fresh fish, perfect for family gatherings or a cozy dinner.
Ingredients
- Fresh fish (tilapia or cod)
- Coconut milk
- Garlic, minced
- Onions, chopped
- Fish or vegetable broth
- Bell peppers, chopped
- Carrots, sliced
- Snap peas
- Cilantro, chopped
- Basil, chopped
- Fresh lime juice
- Chili (fresh or paste)
Instructions
- Prep the ingredients: Chop your onions, garlic, and vegetables. Cut your fresh fish into bite-sized pieces.
- Sauté the aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add chopped onions and sauté until translucent (3-4 minutes), then add garlic and cook for another minute.
- Add the broth and coconut milk, stirring to combine. Bring to a gentle simmer.
- Incorporate the vegetables and cook until they start to soften (5-7 minutes).
- Introduce the fish pieces to the pot. Cook for another 5-10 minutes, or until the fish is cooked through and flaky.
- Season with lime juice and herbs, adjusting salt, pepper, and chili to taste.
- Serve hot, garnished with extra cilantro or lime wedges, alongside crusty bread or rice.
Notes
Feel free to use shrimp or squid as substitutes for fish, and add any seasonal vegetables you like. Adjust the chili to your spice preference.
