Description

A vibrant and flavorful Coconut Lime Fish Soup that captures the essence of the tropics, blending creamy coconut milk and refreshing lime with fresh fish and herbs.

Ingredients

Scale
  • Fish fillets (cod or snapper)
  • 1 can coconut milk
  • 4 cups broth (fish, chicken, or vegetable)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • Fresh cilantro, chopped
  • Fresh basil, chopped
  • Green onions, chopped
  • Juice of 1 lime
  • Chili (fresh or paste)
  • 1 tablespoon oil

Instructions

  1. Heat the oil in a large saucepan over medium heat. Add minced garlic, grated ginger, and diced onions. Sauté until fragrant and soft, about 3–4 minutes.
  2. Pour in the broth and coconut milk. Stir well to combine and bring to a gentle simmer.
  3. Add the diced bell peppers and zucchini. Cook for 5–7 minutes, until tender but still bright.
  4. Gently add the fish fillets to the pot. Cover and simmer for about 10 minutes, or until the fish flakes easily.
  5. Stir in chopped herbs and lime juice. Adjust seasoning with salt, pepper, and chili to taste.
  6. Ladle the soup into bowls, garnishing with additional herbs and lime wedges before serving.

Notes

For a vegetarian option, substitute fish with shrimp or tofu. Use fresh ingredients for the best flavor and adjust spices according to preference.
