- 1 can coconut milk
- 4 cups broth (fish, chicken, or vegetable)
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 onion, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- Fresh cilantro, chopped
- Fresh basil, chopped
- Green onions, chopped
- Juice of 1 lime
- Chili (fresh or paste)
- 1 tablespoon oil
Instructions
- Heat the oil in a large saucepan over medium heat. Add minced garlic, grated ginger, and diced onions. Sauté until fragrant and soft, about 3–4 minutes.
- Pour in the broth and coconut milk. Stir well to combine and bring to a gentle simmer.
- Add the diced bell peppers and zucchini. Cook for 5–7 minutes, until tender but still bright.
- Gently add the fish fillets to the pot. Cover and simmer for about 10 minutes, or until the fish flakes easily.
- Stir in chopped herbs and lime juice. Adjust seasoning with salt, pepper, and chili to taste.
- Ladle the soup into bowls, garnishing with additional herbs and lime wedges before serving.

For a vegetarian option, substitute fish with shrimp or tofu. Use fresh ingredients for the best flavor and adjust spices according to preference.
