A refreshing and creamy dessert that layers silky coconut milk with sweet mango puree and chewy sago pearls.

- 1 cup sago pearls
- 1 can (400ml) full-fat coconut milk
- 2 ripe mangoes, pureed
- 1/2 cup granulated sugar (adjust to taste)
- 2 cups water
- Pinch of salt
Instructions
- Rinse the sago pearls in water until the water runs clear.
- Bring about two cups of water to a gentle boil in a medium saucepan.
- Add the rinsed sago pearls and cook for about 10-15 minutes until transparent with a slight chewy bite.
- Drain the pearls and rinse them under cold water.
- Heat a can of coconut milk with sugar and a pinch of salt until the sugar dissolves.
- Set half of the coconut mixture aside; fold the cooked sago into the remaining coconut milk mixture.
- Puree ripe mangoes in a blender until smooth, adding sugar if needed.
- Assemble the dessert by adding layers of coconut sago mixture and mango puree in serving glasses.
- Chill for at least an hour before serving.
- Garnish with fresh mint or mango slices if desired.
Notes
Ensure to rinse the sago pearls well to keep the texture perfect. Letting the dessert chill allows flavors to meld beautifully.
