Ingredients

- 2 lbs boneless chicken (breast or thighs)
- 1 packet gravy mix
- 2 cups chicken broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp dried thyme or rosemary
- 2 carrots, diced
- 2 potatoes, diced (optional)
- Salt and pepper to taste
Instructions
- Prepare the chicken by seasoning it generously with salt and pepper. Place the chicken in the bottom of the crockpot.
- Sauté the diced onions and minced garlic in a skillet until translucent, then add them on top of the chicken.
- Mix the gravy mix with chicken broth in a separate bowl until fully combined. Pour this mixture over the chicken in the crockpot.
- Add diced carrots and any other preferred vegetables to the crockpot.
- Slow cook on low for 6-8 hours or high for 3-4 hours until the chicken shreds easily with a fork.
- Before serving, taste the gravy and adjust seasonings as needed.
- Serve by shredding the chicken in the crockpot and mixing it with the gravy. Serve over mashed potatoes or rice.
Notes
Try using turkey instead of chicken for a different flavor. You can also substitute the gravy mix with homemade gravy for a richer taste.
