Ingredients

  • 2 lbs boneless chicken (breast or thighs)
  • 1 packet gravy mix
  • 2 cups chicken broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme or rosemary
  • 2 carrots, diced
  • 2 potatoes, diced (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by seasoning it generously with salt and pepper. Place the chicken in the bottom of the crockpot.
  2. Sauté the diced onions and minced garlic in a skillet until translucent, then add them on top of the chicken.
  3. Mix the gravy mix with chicken broth in a separate bowl until fully combined. Pour this mixture over the chicken in the crockpot.
  4. Add diced carrots and any other preferred vegetables to the crockpot.
  5. Slow cook on low for 6-8 hours or high for 3-4 hours until the chicken shreds easily with a fork.
  6. Before serving, taste the gravy and adjust seasonings as needed.
  7. Serve by shredding the chicken in the crockpot and mixing it with the gravy. Serve over mashed potatoes or rice.

Notes

Try using turkey instead of chicken for a different flavor. You can also substitute the gravy mix with homemade gravy for a richer taste.
