Ingredients

  • 2 lbs pork shoulder, cubed
  • 6 strips thick-cut bacon, diced
  • 2 Granny Smith or Honeycrisp apples, diced
  • 1 cup prunes, pitted
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 1 tbsp olive oil
  • 2 tsp fresh thyme
  • 2 tsp fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping onions, dicing apples, and slicing bacon.
  2. Brown the bacon in a large pot over medium heat until crispy and golden, then set aside.
  3. Sauté the onions in bacon fat until translucent and add garlic for the last minute.
  4. Brown the pork cubes in the pot for about 5-6 minutes until seared on all sides.
  5. Combine bacon, broth, apples, prunes, carrots, and celery back into the pot.
  6. Season with thyme, rosemary, salt, and pepper, stirring to combine.
  7. Simmer the stew on low heat for 90-120 minutes until pork is fork-tender.
  8. Taste and adjust seasoning before serving.
  9. Serve in warm bowls, possibly with crusty bread or biscuits.

Notes

Enhance flavors by allowing the stew to rest; it’s even better the next day.
