- 2 lbs pork shoulder, cubed
- 6 strips thick-cut bacon, diced
- 2 Granny Smith or Honeycrisp apples, diced
- 1 cup prunes, pitted
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 carrots, sliced
- 2 celery stalks, diced
- 1 tbsp olive oil
- 2 tsp fresh thyme
- 2 tsp fresh rosemary
- Salt and pepper to taste
Instructions
- Prep your ingredients by chopping onions, dicing apples, and slicing bacon.
- Brown the bacon in a large pot over medium heat until crispy and golden, then set aside.
- Sauté the onions in bacon fat until translucent and add garlic for the last minute.
- Brown the pork cubes in the pot for about 5-6 minutes until seared on all sides.
- Combine bacon, broth, apples, prunes, carrots, and celery back into the pot.
- Season with thyme, rosemary, salt, and pepper, stirring to combine.
- Simmer the stew on low heat for 90-120 minutes until pork is fork-tender.
- Taste and adjust seasoning before serving.
- Serve in warm bowls, possibly with crusty bread or biscuits.
Notes
