Ingredients

Instructions

  1. Combine the cottage cheese and flour in a mixing bowl. If using herbs or spices, add them now.
  2. Add the baking powder, salt, and olive oil. Mix until well combined.
  3. Knead the dough gently on a floured surface for 1-2 minutes.
  4. Divide the dough into 4 to 8 equal sections.
  5. Flatten each piece into a round shape, about 1/4 inch thick.
  6. Preheat a skillet over medium heat.
  7. Cook the flatbread for 2-3 minutes on each side until golden brown.
  8. Serve warm, optionally topped with sautéed mushrooms or cheese.

Notes

Keep the dough covered while working to prevent it from drying out. Avoid overcrowding the skillet for even cooking.
