- 1 cup cottage cheese
- 1 cup all-purpose flour (or whole wheat/gluten-free flour)
- 1 tsp baking powder
- 2 tbsp olive oil
- 1/2 tsp salt
- Optional seasonings: garlic powder, black pepper, fresh herbs
Instructions
- Combine the cottage cheese and flour in a mixing bowl. If using herbs or spices, add them now.
- Add the baking powder, salt, and olive oil. Mix until well combined.
- Knead the dough gently on a floured surface for 1-2 minutes.
- Divide the dough into 4 to 8 equal sections.
- Flatten each piece into a round shape, about 1/4 inch thick.
- Preheat a skillet over medium heat.
- Cook the flatbread for 2-3 minutes on each side until golden brown.
- Serve warm, optionally topped with sautéed mushrooms or cheese.
Notes
Keep the dough covered while working to prevent it from drying out. Avoid overcrowding the skillet for even cooking.
