- 2 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 cup unsalted butter
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh chives, chopped
- 4 toasted sturdy buns
- Optional toppings: lettuce, tomato, pickles, cheese
Instructions
- Marinate the chicken breasts in buttermilk for at least an hour or overnight.
- Mix flour and spices in a shallow dish.
- Heat oil in a skillet (about 1 inch deep). Dredge chicken in seasoned flour, shaking off excess, then fry for 5-7 minutes per side until golden brown. Reserve on paper towels.
- Melt butter in a saucepan, add minced garlic, sauté for 1-2 minutes, then stir in herbs and lemon juice.
- Spread cowboy butter on the bottom half of each bun, add crispy chicken, desired toppings, and close with the other half of the bun.
- Serve warm with a side of fries or a salad.
Notes
For an even crispier finish, consider double dredging the chicken before frying. Make sure not to overcrowd the skillet while frying.
