Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh chives, chopped
  • 4 toasted sturdy buns
  • Optional toppings: lettuce, tomato, pickles, cheese

Instructions

  1. Marinate the chicken breasts in buttermilk for at least an hour or overnight.
  2. Mix flour and spices in a shallow dish.
  3. Heat oil in a skillet (about 1 inch deep). Dredge chicken in seasoned flour, shaking off excess, then fry for 5-7 minutes per side until golden brown. Reserve on paper towels.
  4. Melt butter in a saucepan, add minced garlic, sauté for 1-2 minutes, then stir in herbs and lemon juice.
  5. Spread cowboy butter on the bottom half of each bun, add crispy chicken, desired toppings, and close with the other half of the bun.
  6. Serve warm with a side of fries or a salad.

Notes

For an even crispier finish, consider double dredging the chicken before frying. Make sure not to overcrowd the skillet while frying.
