- 1/4 cup brown sugar
- 1/2 cup melted butter
- 1 cup plain full-fat yogurt
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup cinnamon sugar (for swirling)
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- Prepare the dry ingredients: In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Cream the melted butter and sugars in a separate bowl until well blended.
- Mix in the yogurt, eggs, and vanilla extract until combined.
- Combine the wet and dry mixtures gently, ensuring some lumps remain in the batter.
- Create the cinnamon swirl by mixing cinnamon and sugar in a small bowl.
- Spoon half of the batter into the loaf pan, sprinkle some cinnamon mixture over it, then add the remaining batter and top with more cinnamon sugar.
- Swirl through the batter gently with a butter knife.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Use room temperature ingredients for best results. Store leftovers tightly wrapped at room temperature for up to three days, or freeze for up to three months.
