- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup powdered sugar
- 2 cups all-purpose flour
- 1 cup fresh cranberries, chopped
- 1 tablespoon orange zest
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
- Gradually add in the powdered sugar, mixing until well combined.
- Gently fold in the all-purpose flour and salt.
- Add in the fresh cranberries and orange zest, stirring until evenly distributed.
- Shape the dough into a rectangle, wrap in plastic wrap, and refrigerate for at least one hour.
- After chilling, slice the shortbread into squares or wedges and place them on a parchment-lined baking sheet.
- Bake for 15–20 minutes, or until the edges are lightly golden.
- Allow to cool for a few minutes before transferring to a wire rack. Dust with powdered sugar before serving.
Notes
Ensure butter is at room temperature for better incorporation. Do not skip chilling the dough for the best texture.
