- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup peas
- 8 ounces egg noodles
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- Optional: dash of paprika
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions and garlic, allowing them to sweat for about 3-5 minutes.
- Add the chicken, seasoning with salt and pepper, allowing it to brown slightly.
- Pour in the chicken broth, scraping up any caramelized bits at the bottom.
- Bring to a gentle simmer, cover the pot, and cook for about 15-20 minutes until chicken is cooked through.
- Remove the chicken and shred it, then return it to the pot.
- Stir in the cream, chopped vegetables, and noodles. Cook until noodles are tender, about 5-7 minutes.
- Adjust the thickness of the soup by adding more broth or cream as desired.
- Stir in fresh herbs before serving hot.
Notes
For a lighter version, you can use lower-fat cream or add more vegetables. This soup can be frozen and reheated for quick meals.
