- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 cups all-purpose flour
- 1 cup dried cranberries, chopped
- ½ cup chopped almonds
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the butter and sugar until light and fluffy.
- Add the vanilla extract.
- Combine the flour and salt in a separate bowl, then gradually add to the butter mixture.
- Fold in the cranberries and almonds gently.
- Shape tablespoonfuls of dough into balls and place on the baking sheet.
- Flatten each ball with the bottom of a glass.
- Bake for 12-15 minutes until edges are golden brown.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack.
Notes
For a variation, use pecans or walnuts instead of almonds and dried cherries for a sweeter flavor.
