Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 crisp apples (Honeycrisp or Granny Smith), cored and diced
  • 1 cup dried cranberries
  • 1/4 cup fresh parsley or mint, chopped
  • 1/4 cup nuts or seeds (optional, such as pecans or walnuts)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa in cold water to remove its natural coating.
  2. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low and simmer for about 15 minutes, or until the quinoa is fluffy.
  3. Core and dice the apples, and measure out the cranberries. Optionally, add lemon juice to the apples to prevent browning.
  4. In a large bowl, combine cooled quinoa, diced apples, cranberries, and nuts or seeds if using.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle over the salad and toss to combine.
  6. Add chopped herbs just before serving and toss again.
  7. Let the salad rest for at least 30 minutes to allow flavors to meld.
