- 1 cup quinoa
- 2 cups water
- 2 crisp apples (Honeycrisp or Granny Smith), cored and diced
- 1 cup dried cranberries
- 1/4 cup fresh parsley or mint, chopped
- 1/4 cup nuts or seeds (optional, such as pecans or walnuts)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa in cold water to remove its natural coating.
- In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low and simmer for about 15 minutes, or until the quinoa is fluffy.
- Core and dice the apples, and measure out the cranberries. Optionally, add lemon juice to the apples to prevent browning.
- In a large bowl, combine cooled quinoa, diced apples, cranberries, and nuts or seeds if using.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle over the salad and toss to combine.
- Add chopped herbs just before serving and toss again.
- Let the salad rest for at least 30 minutes to allow flavors to meld.
