Ingredients

  • 4 Boneless, skinless chicken breasts
  • 8 oz Brie cheese, cut into chunks
  • 1 cup cranberry sauce
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme or rosemary, chopped
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Optional: Nuts or breadcrumbs for crunch

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap and gently pound to an even thickness (about half an inch).
  3. Sauté a tablespoon of olive oil over medium heat and add onions until translucent, then add garlic and stir until fragrant.
  4. Remove the skillet from heat and add cranberry sauce and brie to the onion-garlic mixture; season with salt and herbs.
  5. Stuff each chicken breast with a spoonful of the filling and secure with toothpicks.
  6. Heat more olive oil in the same skillet over medium-high heat and sear the stuffed chicken for 3-4 minutes on each side until golden brown.
  7. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through.
  8. Let the chicken rest for 5 minutes before slicing to serve.

Notes

For presentation, serve on a platter with a drizzle of cranberry sauce and sprinkle with fresh herbs.
