- 4 Boneless, skinless chicken breasts
- 8 oz Brie cheese, cut into chunks
- 1 cup cranberry sauce
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp fresh thyme or rosemary, chopped
- 2 tbsp olive oil
- Salt and black pepper to taste
- Optional: Nuts or breadcrumbs for crunch
Instructions
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap and gently pound to an even thickness (about half an inch).
- Sauté a tablespoon of olive oil over medium heat and add onions until translucent, then add garlic and stir until fragrant.
- Remove the skillet from heat and add cranberry sauce and brie to the onion-garlic mixture; season with salt and herbs.
- Stuff each chicken breast with a spoonful of the filling and secure with toothpicks.
- Heat more olive oil in the same skillet over medium-high heat and sear the stuffed chicken for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through.
- Let the chicken rest for 5 minutes before slicing to serve.
Notes
For presentation, serve on a platter with a drizzle of cranberry sauce and sprinkle with fresh herbs.
