Description

Delightful cranberry bars with a sweet and tart filling, topped with a buttery crumb.


Ingredients

  • 2 cups fresh cranberries (or frozen, thawed)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking dish by greasing or lining it with parchment paper.
  2. Prepare the cranberries by rinsing and coating them with granulated sugar; set aside.
  3. In a mixing bowl, cream together butter and brown sugar until light and fluffy. Mix in the egg, vanilla extract, and cinnamon.
  4. In a separate bowl, combine flour, oats, baking powder, and remaining cinnamon. Gradually mix into the butter mixture until a crumbly dough forms.
  5. Press most of the dough into the bottom of the baking dish to form the crust, reserving some for topping.
  6. Spread the sugared cranberries evenly over the crust.
  7. Crumble the reserved dough over the cranberries generously.
  8. Bake for 35-40 minutes until the top is golden brown and the cranberries bubble.
  9. Allow to cool for at least 30 minutes before slicing into squares.

Notes

Experiment with toppings such as melted white chocolate for added sweetness. Allow bars to cool completely to maintain shape when cutting.
