- 2 cups fresh cranberries
- 3/4 cup granulated sugar (adjust to taste)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold and cubed
- 1/2 teaspoon salt
- 1 egg (for egg wash)
- Ice water (as needed)
Instructions
- Prepare the Filling: In a saucepan, combine cranberries, sugar, cinnamon, and a splash of water. Cook over medium heat until cranberries burst and mixture thickens, about 10-15 minutes. Let it cool.
- Make the Dough: In a large bowl, combine flour and salt. Cut in cold butter until it resembles coarse crumbs. Add ice water one tablespoon at a time until dough forms. Divide into two disks, wrap in plastic, and chill for at least one hour.
- Roll and Cut: On a floured surface, roll out one disk of dough to about 1/8-inch thickness. Use a round cutter to make circles (about 4 inches in diameter).
- Fill and Seal: Place a tablespoon of cranberry filling onto one half of the circle. Fold the other half over and press edges to seal. Use a fork to crimp the edges.
- Bake: Preheat the oven to 400°F (200°C). Place hand pies on a parchment-lined baking sheet, brush with egg wash, and sprinkle with sugar. Bake for 20-25 minutes or until golden brown.
- Cool and Enjoy: Let the pies cool slightly before serving. Enjoy them warm or at room temperature!
Notes
Keep the butter cold for a flaky crust. Don’t overfill the pies to prevent bursting.
