- 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 2 fresh lemons (juice and zest)
- 1 cup fresh cranberries
- 2 large eggs
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine melted butter, granulated sugar, and flour until you have a sandy texture. Press this mixture into the bottom of a greased 8×8 baking dish.
- Bake for about 15 minutes, just until it begins to set and lightly brown.
- While the crust is baking, whisk together fresh lemon juice, lemon zest, eggs, and remaining sugar in another bowl. Gently fold in the fresh cranberries.
- Pour the mixture over your pre-baked crust and bake for an additional 25-30 minutes, until the filling is just set and light gold on top.
- Allow the bars to cool on a wire rack, then refrigerate for at least an hour before serving.
- Dust with powdered sugar before serving.
Notes
For best results, use room temperature ingredients. Avoid overmixing the filling for a lighter texture.
