Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 fresh lemons (juice and zest)
  • 1 cup fresh cranberries
  • 2 large eggs
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine melted butter, granulated sugar, and flour until you have a sandy texture. Press this mixture into the bottom of a greased 8×8 baking dish.
  3. Bake for about 15 minutes, just until it begins to set and lightly brown.
  4. While the crust is baking, whisk together fresh lemon juice, lemon zest, eggs, and remaining sugar in another bowl. Gently fold in the fresh cranberries.
  5. Pour the mixture over your pre-baked crust and bake for an additional 25-30 minutes, until the filling is just set and light gold on top.
  6. Allow the bars to cool on a wire rack, then refrigerate for at least an hour before serving.
  7. Dust with powdered sugar before serving.
