Description

A delightful roast chicken dish infused with tart cranberries and rich maple syrup, perfect for family gatherings and festive occasions.


Ingredients

  • 1 whole chicken (45 pounds)
  • 2 cups fresh cranberries
  • 1/2 cup pure maple syrup
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1/2 cup melted butter
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse and pat the chicken dry with paper towels.
  3. In a bowl, mix together the maple syrup, minced garlic, chopped herbs, salt, and pepper. Whisk in melted butter and a splash of chicken broth.
  4. Gently separate the skin from the chicken breast to create a pocket. Pour half the marinade underneath the skin and the rest over the chicken.
  5. Place fresh cranberries inside the cavity of the chicken.
  6. Place the chicken in a roasting pan, breast side up, and pour the remaining chicken broth into the pan. Cover loosely with aluminum foil.
  7. Roast for about 1 hour and 15 minutes, basting occasionally. Remove the foil during the last 20 minutes to allow the skin to crisp.
  8. Ensure the chicken is cooked to an internal temperature of 165°F (74°C) in the thickest part of the thigh.
  9. Let the chicken rest for 10-15 minutes before carving and serve with the pan juices drizzled over each slice.

Notes

For best flavor, allow chicken to marinate for at least an hour or overnight. Use a roasting rack for even cooking.
