A delightful roast chicken dish infused with tart cranberries and rich maple syrup, perfect for family gatherings and festive occasions.
Ingredients

- 1 whole chicken (4–5 pounds)
- 2 cups fresh cranberries
- 1/2 cup pure maple syrup
- 4 cloves garlic, minced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- 1/2 cup melted butter
- Salt and pepper to taste
- 1 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse and pat the chicken dry with paper towels.
- In a bowl, mix together the maple syrup, minced garlic, chopped herbs, salt, and pepper. Whisk in melted butter and a splash of chicken broth.
- Gently separate the skin from the chicken breast to create a pocket. Pour half the marinade underneath the skin and the rest over the chicken.
- Place fresh cranberries inside the cavity of the chicken.
- Place the chicken in a roasting pan, breast side up, and pour the remaining chicken broth into the pan. Cover loosely with aluminum foil.
- Roast for about 1 hour and 15 minutes, basting occasionally. Remove the foil during the last 20 minutes to allow the skin to crisp.
- Ensure the chicken is cooked to an internal temperature of 165°F (74°C) in the thickest part of the thigh.
- Let the chicken rest for 10-15 minutes before carving and serve with the pan juices drizzled over each slice.
Notes
For best flavor, allow chicken to marinate for at least an hour or overnight. Use a roasting rack for even cooking.
