- 2 cups fresh or frozen cranberries
- 1 cup granulated sugar
- 1 cup heavy cream
- 2 tablespoons gelatin
- 1 teaspoon vanilla extract
- 1 ½ cups graham cracker crumbs or pie crust
- 2 tablespoons melted butter
Instructions
- Prepare your pie crust by blending graham cracker crumbs with melted butter and pressing it into a pie dish. Bake at 350°F for 10 minutes and allow to cool.
- Combine cranberries, sugar, and water in a saucepan. Cook on medium heat until cranberries burst, about 10 minutes. Let cool.
- Whip the heavy cream in a chilled bowl until soft peaks form.
- Dissolve gelatin in warm water, then stir it into the cooled cranberry mixture. Gently fold in whipped cream.
- Pour the mousse over the cooled crust and spread evenly. Refrigerate for at least 240 minutes or until set.
- Garnish with whipped cream and fresh cranberries before serving.

Adjust sweetness to your liking and remember to chill the mousse sufficiently for the best texture.
