  • 2 tablespoons gelatin

  • 1 ½ cups graham cracker crumbs or pie crust
  • 2 tablespoons melted butter

Instructions

  1. Prepare your pie crust by blending graham cracker crumbs with melted butter and pressing it into a pie dish. Bake at 350°F for 10 minutes and allow to cool.
  2. Combine cranberries, sugar, and water in a saucepan. Cook on medium heat until cranberries burst, about 10 minutes. Let cool.
  3. Whip the heavy cream in a chilled bowl until soft peaks form.
  4. Dissolve gelatin in warm water, then stir it into the cooled cranberry mixture. Gently fold in whipped cream.
  5. Pour the mousse over the cooled crust and spread evenly. Refrigerate for at least 240 minutes or until set.
  6. Garnish with whipped cream and fresh cranberries before serving.
