- 1/2 cup olive oil
- 1 cup fresh cranberries (or dried, chopped)
- 1/2 cup fresh orange juice
- 1 tablespoon orange zest
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- Combine the olive oil, sugar, and eggs in a large bowl, whisking until smooth.
- Add in the freshly squeezed orange juice and zest, stirring until well incorporated.
- Mix Another bowl, combine the flour, baking powder, and salt. Gradually add to the wet mixture, stirring gently to avoid overmixing.
- Fold in the cranberries gently, ensuring even distribution throughout the batter.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For added crunch, sprinkle coarse sugar on top before baking.
