- 1 cup fresh or dried cranberries
- 2 tablespoons fresh orange zest
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and powdered sugar together in a large mixing bowl until light and fluffy, about 3-5 minutes.
- Incorporate the orange zest and vanilla extract, stirring well.
- Gradually add the flour until just combined, being careful not to overmix.
- Fold in the cranberries gently without breaking them apart.
- Shape the dough into logs about 2 inches in diameter, wrap in plastic wrap, and chill for at least 30 minutes.
- Slice the chilled dough into ¼-inch thick rounds and place on the prepared baking sheet, spacing them apart.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
Notes
