Description

A festive blend of buttery shortbread, tart cranberries, and zesty orange, perfect for holiday gatherings.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, room temperature
  • 1 cup powdered sugar
  • 1 cup fresh or dried cranberries
  • 2 tablespoons fresh orange zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and powdered sugar together in a large mixing bowl until light and fluffy, about 3-5 minutes.
  3. Incorporate the orange zest and vanilla extract, stirring well.
  4. Gradually add the flour until just combined, being careful not to overmix.
  5. Fold in the cranberries gently without breaking them apart.
  6. Shape the dough into logs about 2 inches in diameter, wrap in plastic wrap, and chill for at least 30 minutes.
  7. Slice the chilled dough into ¼-inch thick rounds and place on the prepared baking sheet, spacing them apart.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

For a bakery-style finish, sprinkle coarse sugar on top before baking.
