Ingredients

  • 12 Medjool dates
  • 8 ounces cream cheese, softened
  • 1 cup dried cranberries, chopped
  • 1 cup pecans, toasted and chopped
  • 1 tablespoon vanilla extract
  • 1 tablespoon honey or maple syrup (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice each Medjool date lengthwise and remove the pit.
  3. In a mixing bowl, combine cream cheese, dried cranberries, and pecans.
  4. Add vanilla extract and honey or maple syrup if desired.
  5. Stuff each date with a spoonful of the cream cheese mixture.
  6. Place the stuffed dates on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes until warm and slightly caramelized.
  8. Allow to cool before serving.
