- 12 Medjool dates
- 8 ounces cream cheese, softened
- 1 cup dried cranberries, chopped
- 1 cup pecans, toasted and chopped
- 1 tablespoon vanilla extract
- 1 tablespoon honey or maple syrup (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Slice each Medjool date lengthwise and remove the pit.
- In a mixing bowl, combine cream cheese, dried cranberries, and pecans.
- Add vanilla extract and honey or maple syrup if desired.
- Stuff each date with a spoonful of the cream cheese mixture.
- Place the stuffed dates on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until warm and slightly caramelized.
- Allow to cool before serving.
Notes
