Ingredients

- ½ cup chopped pistachios
- ½ cup chopped dried cranberries
- ¼ cup nut butter (almond, cashew, or peanut)
- ¼ cup honey or maple syrup
- Chia seeds (optional)
Instructions
- In a large mixing bowl, combine the rolled oats, chopped pistachios, and dried cranberries.
- Stir in the nut butter until well blended with the dry ingredients.
- Drizzle in the honey or maple syrup and mix thoroughly.
- Take small portions of the mixture and roll them into balls, about the size of a tablespoon.
- Place them on a lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Enjoy right away or store in an airtight container in the refrigerator for up to a week.
Notes
For variations, you can substitute walnuts or almonds for pistachios, and dried cherries or blueberries for cranberries. If the mixture feels too crumbly, add more nut butter or a splash of water.
