Description

  • 1 cup cranberry sauce (homemade or store-bought)
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 2 sprigs fresh rosemary or thyme
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or butter

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the roast generously with salt and pepper.
  3. Heat olive oil or butter in a skillet over medium-high heat and sear the beef on all sides until browned, about 3-4 minutes per side.
  4. Sauté the minced garlic and sliced onions in the same skillet until fragrant and translucent.
  5. Spread the sautéed mixture over the bottom of a baking dish and place the seared beef on top.
  6. Pour the cranberry sauce evenly over the roast.
  7. Sprinkle with fresh herbs and cover the dish tightly with foil.
  8. Roast in the oven for about 120 to 150 minutes until an internal temperature of 135°F (57°C) is achieved for medium-rare.
  9. Rest the beef for 10-15 minutes after removing from the oven.
  10. Slice and serve with the cranberry glaze drizzled over the beef.
