- 8 oz lasagna noodles (no-boil preferred)
- 1 lb ground beef or turkey (or 1 cup sautéed mushrooms for vegetarian)
- 3 cloves garlic, minced
- 2 cups heavy cream (or half-and-half)
- 4 cups chicken or vegetable broth
- 1 jar marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 cups fresh spinach (or kale/zucchini as substitutes)
- Salt and pepper, to taste
Instructions
- Sauté the garlic with olive oil until fragrant, about 1-2 minutes.
- Brown the ground meat until cooked through, about 5-7 minutes.
- Add the chicken or vegetable broth and marinara sauce, stirring and letting it simmer.
- Incorporate the heavy cream slowly to create a creamy base.
- Mix in the lasagna noodles and cook according to package instructions, about 10-12 minutes.
- Finish with mozzarella and parmesan, stirring until melted, then fold in the spinach.
- Season with salt, pepper, and herbs as desired before serving hot.
Notes
If soup thickens, add more broth or cream for desired consistency. Leftovers taste better the next day!
