Ingredients

  • 3 cloves garlic, minced
  • 2 cups heavy cream (or half-and-half)
  • 4 cups chicken or vegetable broth
  • 1 jar marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 cups fresh spinach (or kale/zucchini as substitutes)
  • Salt and pepper, to taste

Instructions

  1. Sauté the garlic with olive oil until fragrant, about 1-2 minutes.
  2. Brown the ground meat until cooked through, about 5-7 minutes.
  3. Add the chicken or vegetable broth and marinara sauce, stirring and letting it simmer.
  4. Incorporate the heavy cream slowly to create a creamy base.
  5. Mix in the lasagna noodles and cook according to package instructions, about 10-12 minutes.
  6. Finish with mozzarella and parmesan, stirring until melted, then fold in the spinach.
  7. Season with salt, pepper, and herbs as desired before serving hot.

Notes

If soup thickens, add more broth or cream for desired consistency. Leftovers taste better the next day!
