- 1 lb Chicken (breast or thighs)
- 2 tbsp Butter (unsalted)
- 3 cloves Garlic (minced)
- 1 cup Fresh mushrooms (button or cremini)
- 8 oz Pasta (fettuccine or penne)
- 1 cup Chicken broth
- 1 cup Heavy cream
- 1/2 cup Parmesan cheese (grated)
- Fresh herbs (rosemary and thyme)
- Salt and pepper (to taste)
Instructions
- Cook the pasta: Boil salted water, cook pasta until al dente, reserve a cup of pasta water, drain, and set aside.
- Sauté the chicken: In a skillet, melt butter, season chicken with salt and pepper, and cook until golden and fully cooked, about 6–8 minutes per side.
- Create the sauce: In the same skillet, add more butter, sauté garlic and mushrooms until soft.
- Build the flavor: Add chicken broth, scrape the pan, stir in cream, and season with herbs, salt, and pepper.
- Combine: Return chicken to skillet with pasta, toss together, and add pasta water for desired consistency.
- Finish it off: Stir in Parmesan cheese until melted and creamy, then serve hot.
Notes
Be sure to reserve pasta water for the sauce’s consistency and taste for seasoning after adding the cheese.
