Ingredients

  • 1 lb Chicken (breast or thighs)
  • 2 tbsp Butter (unsalted)
  • 3 cloves Garlic (minced)
  • 1 cup Fresh mushrooms (button or cremini)
  • 8 oz Pasta (fettuccine or penne)
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese (grated)
  • Fresh herbs (rosemary and thyme)
  • Salt and pepper (to taste)

Instructions

  1. Cook the pasta: Boil salted water, cook pasta until al dente, reserve a cup of pasta water, drain, and set aside.
  2. Sauté the chicken: In a skillet, melt butter, season chicken with salt and pepper, and cook until golden and fully cooked, about 6–8 minutes per side.
  3. Create the sauce: In the same skillet, add more butter, sauté garlic and mushrooms until soft.
  4. Build the flavor: Add chicken broth, scrape the pan, stir in cream, and season with herbs, salt, and pepper.
  5. Combine: Return chicken to skillet with pasta, toss together, and add pasta water for desired consistency.
  6. Finish it off: Stir in Parmesan cheese until melted and creamy, then serve hot.

Notes

Be sure to reserve pasta water for the sauce’s consistency and taste for seasoning after adding the cheese.
