- 8 oz linguine or fettuccine
- 1 cup heavy cream
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 onion, diced
- 1 bell pepper, diced
- 2 tbsp Cajun seasoning
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
Instructions
- Cook the Pasta: Boil a large pot of salted water and cook pasta according to package instructions until al dente. Reserve a cup of pasta water before draining.
- Sauté the Vegetables: In a large skillet over medium heat, melt butter. Add minced garlic, diced onion, and bell peppers. Sauté for 3-5 minutes until tender.
- Prepare the Shrimp: Add shrimp and sprinkle with Cajun seasoning. Cook until pink, about 4-5 minutes.
- Create the Sauce: Lower heat, add heavy cream, and stir in Parmesan until melted. Adjust consistency with reserved pasta water if needed.
- Combine: Fold cooked pasta into the creamy mixture until coated. Adjust seasoning and add black pepper to taste.
- Garnish: Serve warm, sprinkled with fresh parsley and extra Parmesan if desired.
Notes
For a lighter version, substitute half-and-half for heavy cream. Be careful not to overcook shrimp to retain tenderness.
