  • 6 slices Bacon, diced
  • 8 oz Mushrooms (cremini or shiitake), sliced
  • 3 cloves Garlic, minced
  • 1 Onion, chopped
  • 4 cups Chicken or Vegetable Broth
  • 1 cup Heavy Cream
  • 2 tsp Fresh Thyme
  • 2 tbsp Fresh Parsley, chopped
  • Salt and Pepper, to taste
  • Red Pepper Flakes, optional

Instructions

  1. Cook the Bacon: In a large pot or Dutch oven, cook diced bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.
  2. Sauté Aromatics: Add chopped onions and garlic to the pot, cooking until translucent. Add sliced mushrooms and cook until softened.
  3. Add Chicken and Broth: Place chicken in the pot, followed by the broth. Simmer until chicken is cooked through, about 15-20 minutes.
  4. Shred the Chicken: Remove chicken, shred it with two forks, and return it to the pot.
  5. Stir in Cream: Lower heat and stir in the cream, adjust seasoning with salt, pepper, and red pepper flakes.
  6. Final Touch: Stir in crispy bacon and fresh parsley just before serving.
  7. Serve: Ladle into bowls and enjoy with crusty bread.
