- 1 lb Boneless Chicken (breast or thighs)
- 6 slices Bacon, diced
- 8 oz Mushrooms (cremini or shiitake), sliced
- 3 cloves Garlic, minced
- 1 Onion, chopped
- 4 cups Chicken or Vegetable Broth
- 1 cup Heavy Cream
- 2 tsp Fresh Thyme
- 2 tbsp Fresh Parsley, chopped
- Salt and Pepper, to taste
- Red Pepper Flakes, optional
Instructions
- Cook the Bacon: In a large pot or Dutch oven, cook diced bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.
- Sauté Aromatics: Add chopped onions and garlic to the pot, cooking until translucent. Add sliced mushrooms and cook until softened.
- Add Chicken and Broth: Place chicken in the pot, followed by the broth. Simmer until chicken is cooked through, about 15-20 minutes.
- Shred the Chicken: Remove chicken, shred it with two forks, and return it to the pot.
- Stir in Cream: Lower heat and stir in the cream, adjust seasoning with salt, pepper, and red pepper flakes.
- Final Touch: Stir in crispy bacon and fresh parsley just before serving.
- Serve: Ladle into bowls and enjoy with crusty bread.
