- 2 boneless chicken breasts or thighs, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- Salt to taste
- Fresh parsley or cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and add the prepared chicken, seasoned with cumin, paprika, and salt. Cook until golden brown and no longer pink, about 5-7 minutes.
- Add sliced onions and bell peppers to the skillet and sauté until tender, around 5 minutes.
- In a large bowl, combine the chicken, sautéed vegetables, heavy cream, and half of the cheeses. Stir until well mixed.
- Pour the mixture into a greased casserole dish and sprinkle with the remaining cheese on top.
- Bake in the preheated oven for 30-35 minutes, or until bubbly and golden brown. Optionally, broil for the last few minutes for a crispy top.
- Let cool for a few minutes, then serve hot, garnished with fresh herbs.
Notes
Feel free to replace chicken with turkey or a plant-based protein. You can also add black beans or corn for extra nutrition.
