- 1 can (13.5 oz) full-fat coconut milk
- 4 cloves garlic, minced
- 1 sweet onion, chopped
- Juice and zest of 2 limes
- 1/4 cup fresh cilantro, chopped

- 1/2 tsp chili flakes (optional)
- Olive oil for sautéing
Instructions
- Prepare the ingredients: chop the onions, mince the garlic, zest and juice the limes, chop the cilantro, and slice the chicken into bite-sized pieces.
- Sauté the aromatics: In a large skillet over medium heat, add olive oil, add the onion and cook until translucent. Add the minced garlic and cook until fragrant.
- Cook the chicken: Add the chicken pieces, season with salt and pepper, and cook until browned on all sides.
- Add the coconut milk and stir well, allowing it to simmer for about 10 minutes.
- Finish by stirring in lime juice and zest, adjusting seasoning as necessary, and adding cilantro and chili flakes.
- Serve hot over rice or with bread, garnished with additional cilantro if desired.
