- 1 lb steak (flank or sirloin)
- 12 oz tortellini (fresh or frozen)
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh chives, chopped
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- Salt to taste
- Black pepper to taste
- 1/4 tsp smoked paprika
Instructions
- Prepare the Steak: Cut steak into bite-sized pieces. Heat a skillet over medium heat, add butter, and sear the steak for 3-4 minutes until browned but still pink. Remove from skillet.
- Cook the Tortellini: In the same skillet, add water and bring to a boil. Add the tortellini and cook according to package instructions until al dente.
- Make the Cowboy Butter Sauce: Drain tortellini and return to the skillet. Add more butter, garlic, and herbs. Sauté until fragrant. Pour in cream and let it simmer until it thickens slightly. Stir in Parmesan and season with salt and pepper.
- Combine Everything: Gently fold the steak back into the skillet, coating everything in the sauce. Heat through for 1-2 minutes.
- Serve Immediately: Plate the dish and garnish with extra herbs and cheese.
