- 1 lb large shrimp, peeled and deveined
- 1 cup orzo pasta
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons butter
- 2 cups vegetable or chicken broth
- Fresh parsley or dill, for garnish
- Salt and pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions, about 8-10 minutes, until al dente.
- In a large skillet over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp, seasoning with salt and pepper, and cook until they turn pink, approximately 2-3 minutes on each side.
- Reduce the heat to low, then add the heavy cream and lemon juice, stirring to combine all ingredients and bring just to a simmer.
- Drain the orzo and add it to the skillet, mixing it with the shrimp and creamy sauce. Splash in a little broth if it’s too thick.
- Remove from heat and stir in lemon zest and freshly chopped parsley. Adjust seasonings to taste.
- Transfer to bowls and serve immediately, possibly with a wedge of lemon.
Notes
Feel free to substitute shrimp with sautéed mushrooms or grilled chicken for a different protein option. Adjust cream for a lighter version.
