Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons butter
  • 2 cups vegetable or chicken broth
  • Fresh parsley or dill, for garnish
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions, about 8-10 minutes, until al dente.
  2. In a large skillet over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the shrimp, seasoning with salt and pepper, and cook until they turn pink, approximately 2-3 minutes on each side.
  4. Reduce the heat to low, then add the heavy cream and lemon juice, stirring to combine all ingredients and bring just to a simmer.
  5. Drain the orzo and add it to the skillet, mixing it with the shrimp and creamy sauce. Splash in a little broth if it’s too thick.
  6. Remove from heat and stir in lemon zest and freshly chopped parsley. Adjust seasonings to taste.
  7. Transfer to bowls and serve immediately, possibly with a wedge of lemon.

Notes

Feel free to substitute shrimp with sautéed mushrooms or grilled chicken for a different protein option. Adjust cream for a lighter version.
