Ingredients

  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian herbs (oregano and basil)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil

Instructions

  1. Prep your ingredients by mincing the garlic and chopping the sun-dried tomatoes.
  2. Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then cook for about 5-7 minutes on each side until golden brown. Remove and set aside.
  3. Add minced garlic to the skillet; sauté for 1-2 minutes until fragrant.
  4. Add sun-dried tomatoes and fresh spinach. Wilt the spinach, then pour in the heavy cream and stir until combined.
  5. Return the chicken to the skillet and sprinkle with Parmesan cheese. Simmer until the cheese melts.
