- 2 boneless chicken breasts or thighs
- 1 cup heavy cream
- 4 cloves fresh garlic, minced
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian herbs (oregano and basil)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
Instructions
- Prep your ingredients by mincing the garlic and chopping the sun-dried tomatoes.
- Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then cook for about 5-7 minutes on each side until golden brown. Remove and set aside.
- Add minced garlic to the skillet; sauté for 1-2 minutes until fragrant.
- Add sun-dried tomatoes and fresh spinach. Wilt the spinach, then pour in the heavy cream and stir until combined.
- Return the chicken to the skillet and sprinkle with Parmesan cheese. Simmer until the cheese melts.
- Garnish with fresh herbs and serve with pasta, rice, or salad.
Notes
For lighter options, substitute half-and-half for heavy cream or chicken with tofu or shrimp.
