- 1 lb Boneless chicken (breast or thighs)
- 4 cloves Fresh garlic, minced
- 1 cup Heavy cream
- 1/2 cup Sun-dried tomatoes, chopped
- 2 cups Fresh spinach
- 1 tsp Dried thyme
- 1 tsp Dried oregano
- Salt and pepper to taste
- 2 tbsp Olive oil
Instructions
- Prepare your ingredients: chop garlic, sun-dried tomatoes, and fresh spinach. Slice chicken into strips.
- Heat a skillet over medium heat, add olive oil, and cook chicken until golden brown, about 5-6 minutes. Set aside.
- In the same skillet, add more olive oil if needed, and sauté garlic until fragrant, about 1 minute.
- Stir in sun-dried tomatoes and cream, letting it simmer and thicken for 3-4 minutes.
- Toss in spinach, stirring until wilted.
- Return chicken to skillet, tossing to coat in the sauce.
- Adjust seasoning and serve hot.
Notes
Serve with crusty bread or over rice for a complete meal. For a lighter version, substitute heavy cream with half-and-half or Greek yogurt.
