Ingredients

- 1 lb boneless, skinless chicken breasts or thighs
- 8 oz fresh mushrooms (cremini or button)
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups kale, chopped
- 4 cloves garlic, minced
- 1/2 cup Parmesan cheese, grated
- 1 tsp dried Italian herbs (oregano, basil)
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions
- Prepare your ingredients by chopping garlic, sun-dried tomatoes, and vegetables.
- In a large skillet over medium heat, add a splash of olive oil and cook the seasoned chicken until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, sauté minced garlic for 30 seconds, then add mushrooms and cook until tender.
- Add sun-dried tomatoes and kale, cooking for another minute. Pour in the heavy cream and simmer for about 5 minutes.
- Return the chicken to the skillet, allow it to absorb flavors, sprinkle with Parmesan, and serve hot over pasta, rice, or alone.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut cream. Add a splash of chicken broth if the sauce is too thick.
