Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 8 oz fresh mushrooms (cremini or button)
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups kale, chopped
  • 4 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp dried Italian herbs (oregano, basil)
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Prepare your ingredients by chopping garlic, sun-dried tomatoes, and vegetables.
  2. In a large skillet over medium heat, add a splash of olive oil and cook the seasoned chicken until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside.
  3. In the same skillet, sauté minced garlic for 30 seconds, then add mushrooms and cook until tender.
  4. Add sun-dried tomatoes and kale, cooking for another minute. Pour in the heavy cream and simmer for about 5 minutes.
  5. Return the chicken to the skillet, allow it to absorb flavors, sprinkle with Parmesan, and serve hot over pasta, rice, or alone.

Notes

For a lighter version, substitute heavy cream with half-and-half or coconut cream. Add a splash of chicken broth if the sauce is too thick.
