Description

Ingredients

  • 8 oz fettuccine or spaghetti
  • 1 cup Greek yogurt
  • 4 cloves fresh garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup fresh parsley or basil, chopped
  • 1/2 teaspoon freshly cracked black pepper
  • Salt, to taste

Instructions

  1. Boil water in a large pot and salt it generously. Add the pasta and cook according to package instructions until al dente.
  2. Heat olive oil in a skillet over medium heat and add minced garlic. Sauté until fragrant, ensuring it does not brown.
  3. Reduce the heat and stir in Greek yogurt until creamy. If too thick, add a splash of reserved pasta water or vegetable broth.
  4. Drain the pasta, reserving a cup of pasta water, and toss it in the skillet with the garlic sauce.
  5. Gradually add reserved pasta water to achieve desired sauce consistency and season with salt and pepper.
  6. Sprinkle fresh herbs on top before serving; add a squeeze of lemon juice if desired.

Notes

Can be served with grilled shrimp or chicken for added protein. Great with a side salad.
