Ingredients

- 8 oz fettuccine or spaghetti
- 1 cup Greek yogurt
- 4 cloves fresh garlic, minced
- 2 tablespoons extra virgin olive oil
- 1/4 cup fresh parsley or basil, chopped
- 1/2 teaspoon freshly cracked black pepper
- Salt, to taste
Instructions
- Boil water in a large pot and salt it generously. Add the pasta and cook according to package instructions until al dente.
- Heat olive oil in a skillet over medium heat and add minced garlic. Sauté until fragrant, ensuring it does not brown.
- Reduce the heat and stir in Greek yogurt until creamy. If too thick, add a splash of reserved pasta water or vegetable broth.
- Drain the pasta, reserving a cup of pasta water, and toss it in the skillet with the garlic sauce.
- Gradually add reserved pasta water to achieve desired sauce consistency and season with salt and pepper.
- Sprinkle fresh herbs on top before serving; add a squeeze of lemon juice if desired.
Notes
Can be served with grilled shrimp or chicken for added protein. Great with a side salad.
