- 1 pound Andouille sausage, sliced (or substitute with chicken, turkey, or plant-based protein)
- 1 cup onion, diced
- 4 cloves garlic, minced
- 1 cup bell peppers, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream (or half-and-half or coconut milk)
- 3 tablespoons Cajun seasoning
- Fresh parsley or green onions, for garnish
Instructions
- Prep the ingredients: Wash and peel the potatoes, then chop them into bite-sized pieces. Dice the onions, mince the garlic, and chop the bell peppers.
- Layer in the slow cooker: Start with a layer of potatoes at the bottom, then add the meat (if using), followed by the onions, garlic, and bell peppers. Pour in the broth.
- Season generously: Sprinkle in the Cajun seasoning and stir gently to combine all ingredients.
- Add cream: About 30 minutes before serving, stir in the heavy cream.
- Slow cook: Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Taste and adjust: Before serving, taste and adjust seasoning as necessary.
- Serve and enjoy: Ladle the soup into warm bowls and garnish as desired.
Notes
For added flavor, you can sauté the aromatics before adding them to the slow cooker. Use low-sodium broth to control salt levels.
