Ingredients

  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 3 cups shredded cheese (sharp cheddar and Gruyère)
  • Salt to taste
  • Black pepper to taste
  • Garlic powder or mustard powder (optional)

Instructions

  1. Cook the pasta in salted water until al dente, about 7-8 minutes. Drain and set aside.
  2. Make the cheese sauce by melting butter in a heavy saucepan over medium heat. Whisk in flour, stirring for about 2 minutes until bubbly.
  3. Pour in the milk and cream gradually, whisking continuously to prevent lumps.
  4. Add the cheese blend once the mixture thickens, stirring until melted and smooth. Season with salt and pepper.
  5. Combine the cooked pasta with the cheese sauce, ensuring each piece is coated.
  6. Transfer to a greased 9×13 inch casserole dish, top with additional cheese and breadcrumbs if desired.
  7. Bake in a preheated 350°F oven for about 25 minutes, until the top is golden brown and bubbling.

Notes

Use freshly grated cheese for the best results. Avoid overcooking the pasta and don’t skip the baking step for a nice crust.
