Ingredients

  • 8 oz farfalle or penne pasta
  • 4 cups fresh baby spinach
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 sweet onion, diced
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • Fresh basil or oregano, to taste
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and diced onions, cooking until fragrant and translucent, about 3-4 minutes.
  2. Add halved cherry tomatoes and cook until softened, about 3-4 minutes.
  3. Pour in the chosen pasta and add enough water or vegetable broth to cover the pasta. Bring to a boil, stirring occasionally to prevent sticking, and cook until al dente, around 8-10 minutes.
  4. Lower the heat and fold in the fresh spinach until wilted, then pour in the heavy cream and stir to combine.
  5. Grate in the Parmesan cheese, mixing until melted and creamy. Season with salt and pepper to taste.
  6. Serve immediately, garnished with extra Parmesan and fresh herbs.

Notes
