- 8 oz farfalle or penne pasta
- 4 cups fresh baby spinach
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 sweet onion, diced
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- Fresh basil or oregano, to taste
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add minced garlic and diced onions, cooking until fragrant and translucent, about 3-4 minutes.
- Add halved cherry tomatoes and cook until softened, about 3-4 minutes.
- Pour in the chosen pasta and add enough water or vegetable broth to cover the pasta. Bring to a boil, stirring occasionally to prevent sticking, and cook until al dente, around 8-10 minutes.
- Lower the heat and fold in the fresh spinach until wilted, then pour in the heavy cream and stir to combine.
- Grate in the Parmesan cheese, mixing until melted and creamy. Season with salt and pepper to taste.
- Serve immediately, garnished with extra Parmesan and fresh herbs.
Notes
Feel free to add other vegetables like bell peppers or mushrooms for added flavor and nutrition.
