  • 1 cup orzo pasta
  • 1 lb medium-sized shrimp, peeled and deveined
  • 2 cups fresh broccoli florets
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/2 cup chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish
  • Red pepper flakes (optional)

Instructions

  1. Bring a pot of salted water to a boil and cook the orzo according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet over medium heat, melt butter and sauté the minced garlic for about 30 seconds.
  3. Add the shrimp to the skillet, season with salt and pepper, and cook until pink, about 3-4 minutes. Remove shrimp from the skillet and set aside.
  4. In the same skillet, add more butter if needed and toss in the broccoli. Sauté for about 4-5 minutes until vibrant and tender.
  5. Return the shrimp to the skillet, then pour in the heavy cream and broth. Stir to combine.
  6. Gently fold in the cooked orzo, adding more broth or cream if necessary for consistency.
  7. Taste and adjust seasoning with salt and pepper. Optionally, add a spritz of lemon juice before serving.

Notes

For a vegetarian option, swap shrimp with sautéed mushrooms or chickpeas. Serve with a garden salad and crusty bread.
