- 1 cup orzo pasta
- 1 lb medium-sized shrimp, peeled and deveined
- 2 cups fresh broccoli florets
- 1 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1/2 cup chicken or vegetable broth
- Salt and pepper to taste
- Fresh parsley or basil for garnish
- Red pepper flakes (optional)
Instructions
- Bring a pot of salted water to a boil and cook the orzo according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet over medium heat, melt butter and sauté the minced garlic for about 30 seconds.
- Add the shrimp to the skillet, season with salt and pepper, and cook until pink, about 3-4 minutes. Remove shrimp from the skillet and set aside.
- In the same skillet, add more butter if needed and toss in the broccoli. Sauté for about 4-5 minutes until vibrant and tender.
- Return the shrimp to the skillet, then pour in the heavy cream and broth. Stir to combine.
- Gently fold in the cooked orzo, adding more broth or cream if necessary for consistency.
- Taste and adjust seasoning with salt and pepper. Optionally, add a spritz of lemon juice before serving.
Notes
For a vegetarian option, swap shrimp with sautéed mushrooms or chickpeas. Serve with a garden salad and crusty bread.
