- 1 lb shrimp, peeled
- 2 cups fresh broccoli florets
- 3 cloves garlic, minced
- 1 cup heavy cream
- 2 cups chicken or vegetable broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Cook the orzo according to package instructions in a pot of salted boiling water. Reserve some broth for later.
- In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant.
- Add the shrimp to the skillet, seasoning with salt and pepper, and sauté until pink and curled (2-3 minutes).
- Stir in broccoli florets and simmer for an additional 4-5 minutes until tender but crisp.
- Pour in heavy cream and reserved broth, mix in cooked orzo and allow to absorb flavors.
- Add grated Parmesan cheese and stir until melted.
- Adjust seasoning and garnish with fresh herbs.
Notes
Feel free to substitute shrimp with scallops or zucchini for a vegetarian version. For a lighter option, use half-and-half in place of heavy cream.
