Ingredients

  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Cook the orzo according to package instructions in a pot of salted boiling water. Reserve some broth for later.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant.
  3. Add the shrimp to the skillet, seasoning with salt and pepper, and sauté until pink and curled (2-3 minutes).
  4. Stir in broccoli florets and simmer for an additional 4-5 minutes until tender but crisp.
  5. Pour in heavy cream and reserved broth, mix in cooked orzo and allow to absorb flavors.
  6. Add grated Parmesan cheese and stir until melted.
  7. Adjust seasoning and garnish with fresh herbs.

Notes

Feel free to substitute shrimp with scallops or zucchini for a vegetarian version. For a lighter option, use half-and-half in place of heavy cream.
