Description
A comforting and creamy orzo dish featuring earthy mushrooms and garlic, perfect for family dinners or entertaining friends.
Ingredients
Scale
- 1 cup orzo pasta
- 2 cups mushrooms (button, shiitake, or cremini)
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 2 cups vegetable or chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh herbs (thyme, parsley, or chives) for garnish
- Salt and pepper to taste
Instructions
- Cook the orzo: Bring a pot of salted water to a boil and cook the orzo according to package directions until al dente. Drain and set aside.
- Sauté the mushrooms: In a large skillet over medium heat, melt butter and add olive oil. Toss in sliced mushrooms and a pinch of salt. Sauté for about 5-7 minutes until golden brown.
- Add garlic: Stir in minced garlic and cook for an additional minute until fragrant.
- Create the sauce: Pour in the broth and bring it to a simmer. Let it reduce slightly for about five minutes before adding the heavy cream and grated Parmesan.
- Combine with orzo: Add the cooked orzo to the sauce, mixing until every piece is coated. Season with salt, pepper, and sprinkle with fresh herbs.
- Serve: Spoon the creamy orzo into serving bowls and garnish with extra herbs and cheese.
Notes
Feel free to substitute mushrooms with other vegetables like zucchini or spinach. Serve with a crisp green salad or steamed vegetables for a complete meal.
