  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cups chicken or vegetable broth (low-sodium)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • Fresh herbs (parsley or basil), to taste
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Brown the sausage in a large pot over medium heat, breaking it apart until browned (about 5-7 minutes).
  2. Sauté chopped onions, minced garlic, and diced carrots for 3-5 minutes until softened.
  3. Deglaze the pot with a splash of broth if needed.
  4. Add chicken or vegetable broth and bring to a gentle boil. Stir in ditalini pasta and cook until al dente (about 8-10 minutes).
  5. Lower the heat and stir in heavy cream and grated Parmesan cheese, simmer for a few more minutes.
  6. Season with salt and pepper, then fold in fresh herbs just before serving.

Notes
