- 1 cup ditalini pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 4 cups chicken or vegetable broth (low-sodium)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 carrot, diced
- Fresh herbs (parsley or basil), to taste
- Salt, to taste
- Pepper, to taste
Instructions
- Brown the sausage in a large pot over medium heat, breaking it apart until browned (about 5-7 minutes).
- Sauté chopped onions, minced garlic, and diced carrots for 3-5 minutes until softened.
- Deglaze the pot with a splash of broth if needed.
- Add chicken or vegetable broth and bring to a gentle boil. Stir in ditalini pasta and cook until al dente (about 8-10 minutes).
- Lower the heat and stir in heavy cream and grated Parmesan cheese, simmer for a few more minutes.
- Season with salt and pepper, then fold in fresh herbs just before serving.
Notes
Stir frequently to prevent pasta from sticking. Cook pasta separately if making ahead to prevent mushiness.
