  • 1 pound Italian sausage, casings removed
  • 4 cups chicken broth
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Fresh herbs (basil or parsley) for garnish

Instructions

  1. Sauté aromatics: In a large pot over medium heat, add a tablespoon of olive oil. Once hot, toss in chopped onions and minced garlic. Stir them until translucent and fragrant, about 3-4 minutes.
  2. Brown the sausage: Remove the casings from the Italian sausage and break it into small pieces as you add it to the pot. Cook until browned and fully cooked, about 5-7 minutes.
  3. Add the liquid: Pour in the chicken broth and bring it to a gentle boil. As the broth heats, scrape any bits off the bottom of the pot for extra flavor.
  4. Stir in the ditalini pasta and cook according to package instructions until al dente, usually around 7-8 minutes.
  5. Reduce the heat to low and stir in the heavy cream, allowing the soup to thicken.
  6. Mix in the freshly grated Parmesan cheese, stirring until melted. Taste and season with salt and pepper as needed.
