- 1 onion, chopped
- 3 cloves garlic, minced
- 1 pound Italian sausage, casings removed
- 4 cups chicken broth
- 1 cup ditalini pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Fresh herbs (basil or parsley) for garnish
Instructions
- Sauté aromatics: In a large pot over medium heat, add a tablespoon of olive oil. Once hot, toss in chopped onions and minced garlic. Stir them until translucent and fragrant, about 3-4 minutes.
- Brown the sausage: Remove the casings from the Italian sausage and break it into small pieces as you add it to the pot. Cook until browned and fully cooked, about 5-7 minutes.
- Add the liquid: Pour in the chicken broth and bring it to a gentle boil. As the broth heats, scrape any bits off the bottom of the pot for extra flavor.
- Stir in the ditalini pasta and cook according to package instructions until al dente, usually around 7-8 minutes.
- Reduce the heat to low and stir in the heavy cream, allowing the soup to thicken.
- Mix in the freshly grated Parmesan cheese, stirring until melted. Taste and season with salt and pepper as needed.
- Ladle the soup into bowls, garnish with fresh herbs, and serve piping hot with crusty bread on the side for dipping.
Notes
For a lighter version, use ground turkey or chicken. Gluten-free pasta can be substituted if needed.
